Yes..you read that right.
Last week I came across a picture on Instagram of some Cauliflower Tortillas.
The idea of it interested me!
I am constantly trying to get my kids to eat more veggies.
It's an ongoing battle over here.
I thought if I could sneak the veggies into a tortilla that might be the ticket!
I used the recipe from The Slim Palate Blog.
I just discovered his blog this week and am excited to try out a few of his recipes!
They were a little time consuming to make.
I'll admit most days I'll probably just purchase store bought tortillas.
But for something different every now and then I'll definitely make them again!
We filled ours with cilantro grilled chicken, avocado, tomatoes and chopped spinach.
Travis and I loved them.
The kids turned their noses up.
Vegetables just aren't their thing;)

3/4 a head of cauliflower riced or 2 cups riced and packed
salt and pepper to taste
