Have you guys ever made Quinoa?
I honestly had never even eaten it until I made this recipe.
I have seen recipes pop up all over the internet using it but was never quite sure what it was.
And to be really honest I wasn't even sure how to say it ;)
So let's have a little lesson on Quinoa and it's pronunciation before I share the recipe with you.
I googled and it's pronounced, "Keen-Wah".
You can thank me now or later when you're at the grocery store later wanting to buy it but are too embarrassed to ask what aisle it's on because you don't know how to pronounce it.
That may have happened to me.
I did eventually find it.
In the grain aisle :)
By the rice and such.
Now. What is it?
It is a gluten-free whole grain that is full of protein.
It is also a great source of iron and fiber.
The only kind of quinoa my grocery store had to offer was an Inca Red variety.
I'm not sure if all quinoa tastes the same?
Can anyone verify if it does in the comment section? :)
So here's the recipe that I came up with.

Now on to my recipe.
It's totally just a "wing-it" kind of recipe.
No exact measurements.
-Ingredients-
Quinoa
Mushrooms
Cherry Tomatoes
Spinach
Parmesan Cheese
Olive Oil
Salt+Pepper
-Directions-
Cook your quinoa according to the directions on the box.
Cut up your mushrooms and tomatoes.
In a skillet saute your mushrooms and tomatoes with the olive oil.
Once your mushrooms and tomatoes are sauteed to preference add your fresh spinach to the skillet.
Sautee until it's just wilted.
Add in your cooked quinoa.
Then add in your parmesan cheese.
I used about 1/2 a cup of grated parmesan cheese.
Stir together.
Salt and Pepper everything to taste as you go.
Serve warm and enjoy!

That is my kind of recipe!! I always think about posting recipes I come up with but I never have exact measurements and I figure it's too hard to explain "put just enough of this in" to people who aren't comfortable in the kitchen, ya know? I'm definitely going to try this out!

ReplyDeleteThis sounds really good! I've had quite a few quinoa dishes & I love it because it's so versatile. There's a recipe on Pinterest called something like cheesy quinoa...basically it's mac & cheese but with quinoa. It's really good. I add in some red pepper flakes to give it a kick & I've had a lot of happy eaters with that one!

All quinoa isn't created equal :) We like the 'plain' kind. You can use it in lots of different ways, but we like it best around dinner time as a rice substitute. And just a tip it's tons cheaper in the loose bins at some of the bigger stores (in the city :) or the best deal is at Costco!
