and have absolutely no idea what to do with it.

Making me happy: Naptime. I've been laying down with the kids every day for about an hour.
I tell ya... I fought taking a nap the first couple of days after Eloise was born.
I felt like I should use that time to get things done around the house.
But I soon realized I am a MUCH better mom when I am somewhat rested.
So yes... naptime makes me really happy:)

ReplyDeleteBUtternut squash, slice it long ways and bake it upside down in a glass baking dish with a little bit of water. Once the skin starts bubbling it's done. Then just a little butter and salt and pepper and you're good. That was Easton's first 'food'. He LOVED It!!!!! Of course, I didn't season his, just scooped it out and blended it. It's delish!!!!

One of the things I always do with squash is to just cut it in half and scoop out the seeds, then put a few pats of butter here and there and sprinkle it with brown sugar and roast it in the oven, it will roast faster if you cover the pan with foil and that will keep it moist too...also check on tasteofhome.com they'll probably have several recipes for butternut squash too

love your kiddos at the library! I'm thinking that Elyse needs to take a visit very soon...she would LOVE the library, but would also probably attempt to pull ALL the books into the floor, just like she does at home!
ReplyDeleteDitto with all the direction on the squash. Just slice longways and then add whatever seasoning you want. Cinnamon is fantastic on butternut too, if you like cinnamon! I like a bit of thyme too if I want something savory. I usually roast it cut side up but will add butter in the "well" where you remove the seeds and then baste it a few times over the 45 min that it's in the oven (at 350).

ReplyDeleteAs for that squash, the dashing dish has a few recipes like butternut squash Mac and cheese, and I think a soup recipe. I like to roast it in chunks then dip it in PB2 or peanut butter. Yummm!!
love love love these photos! I have also recently given up Dr. Pepper..... I can't tell myself that I'll NEVER have it again... but a treat now and then needs to be the norm so I'm taking a break and filling my cup with water instead and I really have noticed a difference in how I feel. I'm more energized... which is crazy since DP has so much sugar!
