Chicken Salad Bar

On the menu for dinner tonight was Chicken Salad Sandwiches.
My sister and I began talking about how we like our Chicken Salad.
She prefers hers chicken only.
I prefer mine loaded with grapes, celery and walnuts.

I began to think about how different chicken salad can be.
Sweet or savory.
Loaded with stuff or just plain.
And obviously everyone likes it a certain way.

Tonight's Chicken Salad Bar was quickly thrown together.
But how fun would it be to have a bunch of girlfriends over for lunch and offer a Chicken Salad Bar?!

Here's what I did tonight (at the bottom of the post I've got a few more ideas).

I thought it would be a great idea to start with a base chicken salad.
Shredded Chicken, Salt and Pepper and Mayo.
I then chopped up grapes, celery and walnuts for whoever wanted to add them to their salad.
Travis, Kaitlin (my sister) and the kids all ate their chicken salad on Sweet Hawaiin Buns.
If you haven't ever purchased these they are a HUGE treat in our house!
They make any sandwich taste 100 times better!
I served my chicken salad on a bed of lettuce.





 If I were to ever host a large group and serve a Chicken Salad Bar here are the ideas I had.
 Have your chicken shredded and dry so that everyone can put their dressing of choice on.
I'm thinking disposable bowls and spoons would be perfect for everyone to mix their own salad in.

Dressings
Mayo
Poppyseed Dressing (my friend Robin suggests the Brianna's brand)
Ranch Dressing

 Mix-Ins
Grapes
Celery
Walnuts
Almonds
Pineapple
Pears
Dried Cranberries
Hardboiled Eggs

Breads/Salad
Hawaiian Rolls
Crescent Rolls
Green Salad
Cooked Pasta

    I've never heard of Hawaiian rolls. I don't think we have them up here in the Pacific NW.

    Hope your time with your sister is BLESSED. I'm sure she is just as blessed by her time with you as you are. (Wish my big kids lived close enough that our young ones could go visit. We haven't seen several of them in over a year. So sad.)

  3. you named my favorites! i like grapes, nuts, and celery, and on salad. this coffee shop near my work has THE BEST chicken salad and i discovered the secret - it's seasoned with taragon. try it! :)

  4. Hawaiian rolls are the BOMB! They're so yummy for a barbeque brisket sandwich. Love the chicken salad bar idea - I eat mine with grapes and celery too :)

    My favorite things to add in are grapes, celery, and CELERY SEEDS. OH MY WORD! Add that, you'll never go back! It's amazing!!!!

  6. We eat our chicken salad with celery, rosemary, craisins, and sometimes green apple on croissants. It's funny you posted this, because this is what I was planning on having for dinner tonight. I love this meal in the summer, because I can cook the chicken in the morning while it's still cool out and not have to turn on the oven at night when it's hot.

  7. What a great idea! This sounds so yummy and now I am wishing I were home instead of in the hospital on bedrest so I could whip some up! Maybe I can convince my hubby to do that this weekend! ;) Thanks for the great tips on this recipe!

  8. Great idea to make chicken or tuna salad buffet. It's interesting how everyone has their own take on what's supposed to be in chicken or tuna salad to make it just right. For us, in our chicken salad, along with the mayo, grapes (or diced apple), walnuts and celery, we add in diced cheese and a bit of diced yellow onion and usually always eat it on whole wheat bread. I was thinking it might be good to try it with diced up avocado. It's fun to try different combinations and come up with your own special mix. We recently went to buy tuna for sandwiches and discovered canned mackerel was way cheaper, it is a bit more fishy at first, but after everything was added in to the salad it tasted great, plus it has a ton of calcium...my husband is always harping on me to drink milk and such.. I call him the calcium police, but hey, he's right isn't he, most of us don't get enough calcium.
