It's that time again... two week menu planning over here.
I'll be honest... I am feeling burnt out from cooking and meal planning.

Nothing sounds good... does that ever happen to you?
Nothing but a Dr. Pepper or a cup of coffee with lots of creamer.
I'm pretty sure I could live on beverages alone.
Anyways..back to the meal planning and cooking.
The reality of it is, it's my job.
If I don't do it obviously nobody else will.

So the next two weeks of meals are pretty basic.
Nothing fancy...nothing new.

Sandwiches a few nights, tacos a few more, homemade pizza a few more...

Wednesday (16th)-Homemade Pizza: Pepperoni
Thursday (17th)- Tacos
Friday (18th)- Bacon, Egg & Cheese Sandwiches on English Muffins. Served with fruit salad.
Saturday (19th)- Burgers and Hot Dogs on the grill, baked beans and a pasta salad
Sunday (20th)- Fish Tacos
Monday (21st)- Grilled Chicken served with Broccolli and Garlic Bread
Tuesday (22nd)- Fresh Grilled Burritos
Wednesday (23rd)- BLT Sandwiches served with a fruit salad
Thursday (24th)- Homemade Pizza: Canadian Bacon and Pineapple
Friday (25th)- Baked Potato Bar
Saturday (26th)- Out to Eat
Sunday (27th)- Sloppy Joes served with Chips and Veggies
Monday (28th)- Steak Fajitas

Pasta salad with olives, pepperoni, cheese cubes & Italian dressing. We grilled hot dogs today. I'm all for easy!! I like buying those salad kits and cooking up alittle bit more chicken to make it more of a meal. The southwest kind is really good! Sometimes we'll just do crescent dogs- hot dogs wrapped up in crescent rolls (good with cheese added too) or have breakfast for dinner. Simple is good.
ReplyDeleteI blame it on Summer...I love menu planning in the fall and winter...must be because I love soups, crock pot meals, and comfort food!! We do a lot of grilling and easy recipes in the summer too!!
ReplyDeleteI feel your pain. We're kind of in a rut too but I'm trying to stop from settling in there too long. We've had this garlic chicken a couple times (and it's on the menu for tonight!) It's super easy and quick, especially if you use tenders instead of breasts.

I'm with you! In the Summer I give up! We eat easy! To me, grilling is summer, so I don't mind grilling and doing easy sides. Last night I grilled tenderloin, broiled brocolli and had left over pasta salad and crescant rolls. Today for lunch I'm having leftovers. YUMMY! The tenderloin was PERFECT! I buy the plain and marinade it in zesty italian and grill it on low for 15 minutes each side until it reaches 170. PERFECT. Let it rest 10 minutes before cutting. Tonight is tacos. PRAISE THE LORD FOR TACO NIGHT! ;)
ReplyDeleteThat happens to me all the time! I actually just posted my menu plan for this week on my blog yesterday because its the first time I've planned in probably 2 months. I got so burnt out that I got lazy. But now my head is back in the game :) I do find summer to be a bit easier, lots of grilling and salads. ReplyDeleteI feel like I am constantly in a rut too and have the same things in rotation. I have been trying to plan at least one new recipe a week, though.
ReplyDeleteI just did a post on Monday actually with my menu plan. I struggle with lunches, though because I feel like all my kids want is a sandwich everyday!
I love reading your ideas... we are in a rut also. But here are my 2 staples that are on the menu every week:
ReplyDeleteWe call it BBQ chicken (lame name, but we know what it means!!)
chicken (however much to feed the family)
1 can of salsa
1 can of bbq sauce
Throw it all in the crock pot for 4 hours. Serve over rice and steamed broccoli pairs well.
I know it sounds really weird, but my sister said to just to try it and if it was terrible, she would order take out for us, on her. So I did it and it's AMAZING!!!
Another is taco chili.
1 can of the following:
black beans
kidney beans
corn
tomatoe sauce
chopped tomatoes with chilis (rotel)
1/2 teaspoon of chili powder
1/2 teaspoon of cumin
chicken
1 package of taco seasoning
Throw it all in the crockpot with the chicken on top for 4 or 6 hours
around 30 minutes before you are ready to serve, take chicken out and chop (I throw it in the food processor)
Serve with either corn bread or rice.
