Baked Oatmeal

Goodmorning!
Super quick while I have a minute!
My friend Ashley shared this recipe with me a few weeks ago.
It's a new favorite at our home!
What I really love about it is you can prepare it the night before.
Then when you wake up just pop it in the oven!
Easy!

Baked Oatmeal

1/2 c. Veg Oil
3/4 C. white sugar
2 eggs
1 C. Milk
1/2 tsp salt
1 Tbsp. baking powder
3 c. quick cooking oats

Optional:
1/2 C. Craisins (I used dried cherries)
1/3 C. Chooped almonds whatever you like

Topping:
2 Tbsp. Brown Sugar
1/2 tsp. Ground cinnamon

Directions:
Beat together oil, sugar, mix eggs, milk, salt, baking power, oatmeal. Beat well stir in craisins...etc. Pour into a lightly greased pie pan or (square pyrex) Sprinkle with brown sugar and cinnamon. Cover and refrigerate.

Next morning: preheat 350
Take off the cover.
Bake in oven until firm (35 mins approx)

Serve hot and with Vanilla/plain yogurt.

  5. My sister-in-law shared this recipe with me a long time ago, and I love it. It's really good with just a little bit of maple syrup on top too. Seeing the recipe makes me want to make it!

  6. I love baked oatmeal, I substitute one of my cups of quick cooking oats with roasted flax seeds for extra health benefits. You don't even notice the flax seeds and they are great for you : )
