Chicken and Apple Salad from my friend Amanda
(the directions are like she had written them...I follow her adjustments)
Ingredients
2 pounds chicken tenders, cooked
2 tart apples, cored and cubed
1 7-ounce pound Gouda cheese (I haven't added this)
1 8-ounce package bow-tie pasta, cooked
1/2 cup celery, diced (I leave this out)
1 cup pineapple tidbits
1/2 cup seedless grapes, halved (I use a little more)
2/3 cup sliced almonds
Honey Lime Dressing (recipe follows)
Honey Lime Dressing
1 cup mayonnaise
1/4 cup sour cream
3 tablespoons lime juice
3 tablespoons honey
1 tablespoon poppy seeds (I haven't added these either)
Mix dressing ingredients well.
Directions
Cook pasta according to package directions, drain and cool.
Combine pasta and other salad ingredients in a large bowl. Stir in Honey-Lime Dressing.
For best results, add dressing just before serving. (This is true! It stays creamier)
Chocolate, peanut butter and caramel club bars

45 Club Crackers
2 sticks butter
1 Cup packed light brown sugar
1 Cup peanut butter chips
1 1/2 Cups chocolate chips, melted either on double broiler or in microwave
1. Place 15 club crackers in the bottom of an 8×8 inch square baking pan that’s been lined with foil and sprayed with cooking spray. Sprinkle 1/2 Cup peanut butter chips on crackers.
2. Melt butter and brown sugar in a medium saucepan over medium high heat stirring constantly for 4 minutes, until bubbly, smooth and creamy caramel forms. Pour 1/2 Cup or so of caramel over peanut butter chips then add another layer of crackers, peanut butter chips and caramel. Top with one final layer of crackers then spread with melted chocolate.

Have I mentioned how excited I am about our Internet being up and running next week?!? This blogging from a phone can be slightly tricky. Hi Ashley - I just wanted to say I love reading your blog. I too am a coaches wife and a mom to an 18 month old lil boy who keeps me very busy. However, I love ever second of it! Being a coaches wife is very hard at times but is also very rewarding. Our husbands work some long hours in this heat! Just wanted to drop a lil line and say hello and will be thinking of you during this football season. Your kids are precious!

I'm sad to admit it took me several reads to figure out that you were meaning to say "car". I thought you drove a cadillac & that "cat" was the cool thing to call it! lol
