Overnight Muffaletta

My mom found this recipe awhile back.
Talk about YUM!!!
We made it the night before we left to go camping.
This would be perfect to make the night before you head to the pool or the lake.

Overnight Muffaletta 
 FILLING (mix together the following)
5 seeded and copped plum tomatoes
1 Cup chopped red, orange or yellow bell peppers
1/4 Cup chopped black olives
1/4 Cup chopped red onion
2 cloves garlic, minced
1/4 Cup chopped fresh basil
2 tsp. balsamic or red wine vinegar
drizzle of olive oil



-Scoop out a round loaf of bread leaving 1 inch of bread around the perimeter.
-Brush the inside with olive oil
-Put half the filling in the bottom pressing with a spoon


-Layer sliced deli meat on top of the filling.  We used 1/2 a pound each of ham, turkey and roast beef.
-Layer cheese on top of that. Any kind and as much as you prefer.
-Layer meat again.
-Put the rest of the filling on top of the meat.
-Replace the top. 
-Press firmly.
-Wrap in saran wrap.  Then wrap that in tin foil.
-Refrigerate overnight and then enjoy!

  2. Oh my gosh! This looks so delicious, I might just have to break my ingredient rule to make it! (I usually don't make anything with more than 5 ingredients. Lazy, I know!). The muffaletta looks so delicious and I am a big fan of overnight meals because they save prep time the day of.

  3. This looks INCREDIBLE. Many years ago as a teen-ager, I had muffaletta in New Orleans. Now, when I see one on a menu, I have to try it. Now I can make my own! Awesome!
