Pancake Mix Coffee Cake, Book Worms and Challenger Interview

Ahhh...the last Wednesday of the school year here!  Then.... Schoooool's Out for the Summer!!! :)  I'm looking forward to having Trav home in the afternoons to go to the pool as a family!  We love every minute we can spend as a family in the summer. Once August hits with football season we won't hardly be able to spend time with him again until November.  It's either feast or famine! :)

 I love to make a yummy breakfast when we are all home as a family.  The following recipe is one that my Mom shared with me.  It's not only DELISH but so quick and easy as well!

PANCAKE MIX COFFEE CAKE

CAKE
2 C. Pancake Mix
1/2 C. Sugar
1/4 C. Milk
1/4 C Vegetable Oil
1 Egg
Blueberries (optional)

Mix these ingredients together and pour into a greased 9x13.

TOPPING
3/4 C. Oats
1/3 C. Brown Sugar
1 tsp. Cinnamon
3 Tbsp. Butter

Mix these ingredients together and sprinkle over the top of the cake.

Bake @ 350 degrees for 20-25 minutes.

*I like to add blueberries to our coffee cake when they're in season.  Add as many or as few you as you like to the cake batter!*

Yesterday I was tidying up around the house and realized that I didn't hear Emma and Macey.  I knew they had been playing back in Emma's room and when I peeked in this is what I found...

They sat on her bed and read for an HOUR!!!

  2. Thanks for the recipe. Can't wait to try it. Sounds yummy ... will definitely be adding blueberries to it.

    My husband was a teacher for 21 years. This is the first summer that he is NOT a teacher ... and therefore has to work all summer. It's gonna be weird, for sure. Looks like the kids and I will be making a lot of summer plans without Papa. Sad!

  10. Love coffee cake ~ I wonder if you could put heart healthy pancake mix in there and "call" it heart healthy?? he he!! I have oatmeal pancake mix "heart healthy" that no one will eat... I am SO going to trick them with this recipe! wish me luck!! he he! =) hopping over from Nancy's blog hop!
